I’d like to preface this post with two things. First being that this is a reflection of my own personal experience as a twenty-something living in Idaho – one of the last states to get their first confirmed case of COVID-19. The one nice thing about being at home during the day is making a proper lunch for myself! I love to cook (and eat) so this is a real treat getting to be in my own kitchen for all three meals.
Per my meal prepping yesterday, we had some delicious sandwiches for lunch! Toasted up a bit of bread, added the spread, topped with spinach, lettuce, red onion, and tomato. Now, the kicker here is to add Trader Joe’s Everything But the Bagel seasoning!! (usually we eat these as bagel sandwiches, but ya gotta use what you have on hand!)
I haven’t been following the news as much today. One new thing is that the Mayor of Boise has closed all restaurants for dine-in services. You can still order take-out and delivery, but just can’t go inside. Considering we have enough food to last us a while this doesn’t affect us much, but my heart aches for all of the workers that are quickly finding themselves out of a job.
Tonight’s Activities:
- Workout (SWEAT app)
- Mop the floors
- Freelance work
I can’t believe tomorrow is already Friday!!
